Fruit Cobbler

Oven: 400°

Fruit:
2 T. butter
2-4 cups of ripe fruit
1/4 cup sugar
1/2 cup water
2 T. cornstarch


Batter:
1/2 cup flour
1/2 cup sugar
1/2 t. baking powder
1/4 t. salt
1 egg, slightly beaten
2 T. butter, melted
Make batter: melt butter in medium sauce pan over low heat.  Remove from heat. Mix together: sugar, flour, salt and baking powder.  Add beaten egg to butter.  Add wet ingredients to dry. Set aside. In a medium saucepan make filling: mix together sugar (to taste) and cornstarch; add fruit and water. Cook until bubbly.  Pour into a 9x9x2 baking pan. Pour batter on top of fruit. Bake for 30-40 minutes.
